Portobello Mushroom Pizza

YUMMY, YUMMY, YUMMY! I made this delicious dish tonight! I apologize for the lack of photos, my camera is broken, as I have previously mentioned. But, I have made up for it by offering up the recipe to this delightfully wonderful dish that will satisfy your pallet and not make your waistline suffer!

I have had this cookbook since my birthday (September 4th) but I had yet to utilize it. My Master Cleanse had me so food obsessed that I dug deep into my cookbooks and I decided to start using them!

Here is the recipe from the book:

Portobello Mushroom Pizza

Prep/Cook Time: 20 Minutes
Serves 4

Items Needed:

  • 1 1/2 teaspoons olive oil
  • 1 small onion, chopped
  • 1/2 cup spinach, washed and chopped, finely
  • 1 cup chopped tomatoes
  • 4 cloves garlic, chopped
  • 2 tablespoons, black olives, drained & sliced
  • 1/2 teaspoons dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 medium size portobello mushrooms
  • Light oil as needed
  • 1/2 cup mozzarella cheese

  • Heat the oil in a large skillet and add the onion. Saute for 4 minutes or until soft. Add the spinach, tomatoes, garlic and olives. Continue to saute for about 3 minutes longer.
  • Add oregano, basil, salt, pepper and mix well. Remove from heat.
  • Preheat the broiler and prepare the mushrooms by removing the stems and wiping off any dirt. Brush or spray the mushroom with light oil and place on a cookie sheet. Broil on each side for 4 minutes or until soft. Remove from the heat and fill with the vegetable mixture, Sprinkle with mozzarella cheese and return to the broiler for another 4 to 5 minutes. Serve hot.

Mission Cleanse: Fail

That is right...I failed...well kind of.

So, on day two my friend Kelly noticed that I was talking funny.

When I was with my mom at Barnes & Nobles I was really red & then I would get really pale.

My mom & Jared were not fans of this cleanse at all. They were both trying to tell me not to do it any more and that the gluten was probably out of my system. But I wanted to keep going to fully cleanse and get the full affects.

That was until day three. I felt even worse than day two. I think I was doing it wrong. I don't think I was hydrating enough. I am not a water drinker by nature and I was sick of downing that concoction. I didn't feel enlightened, energized or anything but I knew that it had not been enough time.

Jared could tell that I was light headed. Then he started to mention my favorite food of all time: sushi. Then he mentioned going to my favorite restaurant and all bets were off. I needed food and I didn't care anymore. I was off the cleanse.

But, I don't feel like I totally failed because I don't feel sick. No gluten in my system at all! I can tell that I have been cleansed. So, it was worth it.

Side note: My camera is broken...long story. I am calling today about it because it is under warranty. So, this blog will be lacking pictures for a while.

Master Cleanse DAY TWO

Today was weird.

OK, I woke up with intentions of taking a walk but that didn't happen. Instead I had a play-doh marathon with my son. I found myself making food shaped objects with the clay. Lame...yes. What can I say, I am freaking hungry.

Here are some things I have noticed on this cleanse:

I am crabby. Yes, this was expected, but this is not interfering with my life. I can still parent and function so I am pleased.

My breath stinks and gum is a no-no. So, I am brushing my teeth a ton. Is that off limits? I don't know and I don't care.

I am having crazy dreams. I was taking a nap this afternoon and I had a dream that I was dancing with a giant cupcake. Yes, that is right, a giant cupcake. I was pleading with the cupcake for a bite and it kept telling me no.

Tonight I went out with my mom for a very odd night. I wrote about it on the Endless Possibilities Blog. She ended up surprising me by getting me a gluten free cookbook!

I am picky about cookbooks. I love pictures and this book does not have any but I decided that I still like it because I rather have the calorie count of the items in the book. A lot of gluten free books don't list the calorie count at all, and just because it is gluten free does not mean an item is low cal or low fat.

There are a lot of great recipes in the book and I cant wait try them out once I can eat real food!

Master Cleanse DAY ONE

Well, I started it last night by drinking the tea and I was still sick from the residual glutening. I expected to be running to the bathroom every two minutes but it wasn't like that. I did go to the bathroom but it wasn't horrible. I think that that could be because I was really sick yesterday and in the bathroom yesterday a whole bunch.

I did pee a ton today. It reminded me of being pregnant. There were times that I was peeing every 15 minutes from the amounts of fluids I was consuming from trying to keep myself from getting hungry.

Oh and that lemon/pepper/syrup mix tastes awful...and I have to down it at least 6 times a day :(

If every day is like day one then I can keep this up for ten days but I am hungry. I do want food. It is hard because I am preparing meals for my son and they smell good.

I am waiting for the energy that those websites promised to kick in...

Let me stress how much this sucks... (this post has way too much information!)

OK, so I tried to nap with my son during his nap and it just didn't happen. I kept making trips to the bathroom to puke or crap. Then I would lay down in between rounds & my body kept thinking I was dying a slow death and I had the hot and colds. I knew that I needed to walk to the store ( I cant drive right now because of medical reasons...) to get some of the stuff for the fast and also some stuff for Jacob. So, I waited until I thought I was in the clear. I kept drinking water to keep myself hydrated and off we went.

I made it there only stopping to puke twice. Man, this was bad.

We got to the store and the food was making me want to die. Jacob kept asking for everything! I fed him snacks on the way so I told him no. I purchased my items and some Powerade in case I needed electrolytes.

I drank some and then I decided that I felt better. The store was right next to a Petsmart so I thought I would take Jacob in and show him animals. We were there for a bit and I had no issues. Then we were leaving and it hit me again. I hit the rest room and got sick again.

The walk home was awful. I was practically running. I cant wait to start this detox in the morning and rid myself of any toxins. I feel so sick.

I am afraid to eat dinner. I don't know how food will affect me tonight. Well, I have to eat, so I will make bland gluten free noodles and pray that I am fine.

So sick of it.

Two glutenings in two different days...

The first one happened three days ago. It happened by accident. I was making my usual egg breakfast and I was distracted. I grabbed my cooking spray and sprayed away. I was taking my my adorable two year old as I was cooking. Then I ate my breakfast and 45 minutes later I was really sick and I wouldn't figure out why. Then I came to the conclusion that I used the cooking spray that I use when I make my non gluten free baking items...the cooking spray with FLOUR in it! Now, that spray has been moved to the shelf with my baking goods.

Then yesterday at lunch with my boyfriend I was glutened by salad dressing. It was the first time I was glutened in front of him. My whole body got itchy, my tongue got red and my stomach got a terrible stomach ache. Luckily, I didn't get an anal explosion or vomiting episode. That would have been mortifying. But, now every time I eat I have a terrible stomach ache.

I hung out with my friend Ashley today and I couldn't enjoy my food at all. It was terrible. I just had a reaction to it as thought I was poisoned by wheat because I feel like I am totally contaminated now. I may as well go on a binge and eat a donut or something...OK, I know that would make it even worse.

So, I am going to take drastic measures and I don't care what anyone says. I tough long and hard about it. I cant take the pain I was in last night after dinner or this morning or right now. In the morning, I am going to start a 10 day MASTER CLEANSE!

So, every day on this blog and maybe even the Endless Possibilities blog I will write about it. I am sure I will be cranky. I read about it on this one blog I follow and it seemed extreme but I need to rid my body of toxins and any gluten I have lurking in me. I really do.

I am sick of feeling sick from this. So, if this sounds extreme, it is. If I am cranky, I am sorry. This is just what I have to do in order to feel better and function. You didn't just spend a long time in the bathroom with me! I know...too much info...to bad!

Wheat is evil and I think the Master Cleanse is poison to it! So, I will write about it all...the good, the bad and the ugly...

Have you ever gone to a restaurant and been pretty famished, only to have the item brought out be measly and not fulfilling? Well, I had this experience after hours of swing dancing on Saturday night. I went to Applebee's with a group of friends and they got rid of their late night happy hour ( I know... why?) so I ordered off the Right Portions Menu. I ordered the mini cheeseburgers and since the fries were a no-no I ended up with a side of fruit. Well, this came out:

My friends laughed! I knew that I ordered MINI cheeseburgers but this was really mini. I felt like they wanted to feed an Ompaloopma and not an adult.

Glutino Gluten Free Penne Duo Mushroom Meal

The Review:

I know that I have written that I have never been let down by Glutino brand before but I think I have been corrected...and this meal is why. It was not that the meal totally sucked, it served its purpose and filled me up when I was hungry. But, it wasn't a satisfying texture and I didn't find the taste to be out of this world delicious. It wasn't like I bit into this dish and felt like I couldn't wait to purchase this item again.

What is the verdict?

Would I eat this again...yes, because I think I need to try it again to see if I really don't like it. I think you should decided for yourself. I still love Glutino brand. I just feel like if they revamped this item it could be better. I am on the fence.
