Blogging Issues...

So, I have had many things I would love to post....but I have been unable to upload photos! I have a slew of them. I have been able to use my other Blogger hosted blog with no issues but what is a post with no photos? CRAP, that is what! So, I will tell you what is coming up because I think I have a trick around my issues. I will write my posts on my other blog and then I will copy the HTML on the other blog and paste it into this blog, that should solve the problem, or at least I hope. Anyway, I know that this blog has been slacking and there are a plethora of reasons, but here is what is to come:
  • Book Reviews
  • More Food Reviews
  • Gluten free in college
Well, I did mention a book review, one of the books is:

I am doing this book review unlike any other book review I ever have before, because this book has impacted me unlike any other book. If you are interested in ordering the book, please check out Chef Rachel Albert-Matesz website for more information.

Whole Foods Gluten Free Chocolate Cupcakes

If you look around this blog long enough, you will notice that I have an obsession with cupcakes. I adore them. The only thing that would win over a cupcake is an eclair. About a month ago (yes, that is how much of a blog-slacker I have been lately) I tried out these cupcakes from Whole Foods with my friend Ashley, who is not gluten free.

The Review:

These prepackaged cupcakes are found in the freezer section at your local Whole Foods market. Because they are frozen, they need to be microwaved for a little bit first. My first attempt was a total fail...
As you can see from the photo above, the fail is the cupcake on the right. It was cooked too long! We still ate it and it was still good. I think it was in there for 30 seconds. The one on the left was cooked for 12 seconds and it was delicious as well. The frosting is rich and decadent. These cupcakes are awesome and filling. They do not taste chalk like and they do not make you feel deprived. I would eat these again, however the calorie count is high, so it wouldn't be a regular staple in my diet.

The Stats:

Serving size: 1 cupcake
Calories: 470
Total Fat: 24 grams
Total Carbs: 64 grams
Sugars:47 grams
Protein: 5grams

Walmart trying to be Fresh & Easy?

Fresh & Easy (located in CA, AZ, NV) is a store that provides produce, prepackaged fresh meals, and convince at decent prices. Walmart is now trying to compete with that...but at Walmart prices. Case in point:

I am pondering this....

So....is it more of a Walmart?

Or is it more of a Fresh & Easy?

Well, the store looked like both as you can tell from the photos that I took. Fresh and Easy seems to have more gluten free choices by far. I like Fresh & Easy a lot more and they have this yummy gluten free pudding and they offer So'fella cake mix. Plus, at the Walmart I saw this...
Jerks!

My 1st time at CHIPOTLE

Stephanie was the first person to tell me how easy it is to eat gluten free at Chipotle , then I saw folks on Twitter talking about it. So, when my sister, Jacob and I needed a place to go to dinner the other night, it was a easy choice. The portions were massive! I shared my meal with Jacob in half and I still couldn't finish mine! It was so yummy! If you have not eaten there yet, I suggest going.

Betty Crocker Gluten Free Brownies & Cookies!

Two reviews in one? Hells yes! OK, it is because I have been a bad blogger...a slacker of sorts. In fact, I almost slacked tonight and put this off for yet ANOTHER night. This should really be two separate posts. I have been dedicating time to my new (and 4th blog Heartbroken Confessional), so please forgive me. I am a heartbroken blogger now, but the Betty Crocker GF brownies and cookies sure helped! They were really...hum...I should set this up like my other reviews...or I am just going to slack this so much that I am not even going to do this in my traditional form? Screw tradition!

The Cookies:

SO GOOD! I loved them. I could have eaten them all up, but I shared them! After all, gluten free sharing is caring! I only ate three! Yes, a crime because they were so good. I wanted them all to myself though. This is them before baking:
Final Product:
They were moist and chewy. These were serious gluten free perfection. Awesomely gluten free.

The brownies:

Oh my gosh! I loved the brownies more than the cookies....I didn't think that would be possible. So delish! Smelled like heaven in the oven. I served it warm with vanilla ice cream on the side:
I could eat this daily if it was a health food. It should be written as a prescription when going through a breakup. I served this to my sister and my friend Melissa and they couldn't even tell it was gluten free (but they knew it was because I was eating it).

If you have not tried these, you should! You will not regret these!

Thanks Betty!

If you follow my twitter ,you would know that I was not only waiting for the launch of these Betty Crocker Gluten Free mixes, but when they came out, the gluten free community was having a hard time locating them! Just because they launched didn't mean that they were available everywhere yet. On Sunday I spotted the elusive GF mixes at my local Fry's and I picked these up! Look for reviews on these soon! I am currenly making the chocolate chip cookies! Review should be posted tonight!

GFSteph posted a great review on the white cake mix, you should check it out here!

Caramello Cupakes!

These are divine. I LOVE Caramello Bars and I LOVE CUPCAKES. I love cupcakes so much that I stalk cupcake blogs as though they were porn, yes food porn! No, I don't get off on it, but it is visually pleasing. It is actually worse because I know that the cupcakes I am lusting after are most always not gluten free. So, it is almost as though I am committing a sin. I decided to create a Caramello cupcake...well, at least I am pretty sure they didn't exist prior to their creation when I was asked to bring cupcakes for Karmen's b-day celebration!

Here is how you can also make them!

Ingredients:
-A chocolate GF cake mix ( Sof'ella Organic Gluten Free Chocolate Cake & Frosting{it comes with the frosting in the box})
-A jar of 12 oz caramel ( I used Walden farms because it was sugar free and my bf is diabetic but it also said GF on it. It also was calorie free, fat free, carbohydrate free, cholesterol free, and preservative free. By itself it isn't the best tasting but when it was in the cupcake, you couldn't even tell that it was sugar free!) Most of the jar will not be used, the jar I bought just happened to be 12 oz. each cupcake will most likely have about 1/4 tablespoon inside or less but it is hard to tell how much you are injecting inside.
- Caramello Bars (Calculate how many cupcakes you want. If you want 12 cupcakes, buy three bars because there are 4 squares on each bar.)

Directions:
-Line the cupcake pan with liners. Fill half way with the Sof'ella Organic Gluten Free Chocolate Cake Mix and bake according to instructions.
-Once cupcakes are baked and cooled, inject a good amount ( not so much that the cupcake breaks) of caramel into the cupcake.
-Then follow the instructions listed to make the Sof'ella Organic Gluten Free Frosting.
-Once Frosting is made, frost cupcake and garnish with Caramello chocolate!
