A relaxing day with Stephanie

This week I got to see a lot of great friends. I saw Kat on Tuesday night, Jacob and I spent Thursday with Kelly, Rosie and Ella came over yesterday for a play date and today, I spent with Stephanie!

Lunch was great. We went to Wildflower Bread Co and ate this yummy wheat free soup. We caught up on life and people watched!

It was a laid back afternoon. After lunch we walked the mall a bit and then we went for gelato at this place by my house.

After gelato we went to LeeLee's Market to pick up some gluten free items since we both try to steer clear of wheat (me) and gluten (her). LeeLee's always has interesting things to look at. They have items that I wouldn't even know how to cook or incorporate into a recipe.



I love LeeLee's because I can find items that I ate growing up from Argentina.

I totally enjoyed my day with Steph and I cant wait to see her again!

Yellow Corn Taco Dinner

As you know, I am wheat intolerant. I cook dinner several times a week for my family and sometimes it can be challenging to find items that I can eat that taste good. It is pretty hit or miss.

My mom bought this taco mix the other day at Sprouts and I made it for dinner tonight. It was so good that I decided to post it on here. The box comes with almost all you need to make a yummy taco dinner. You just add the meat and the veggies and cheese. Pretty simple!

Core Brown Rice Pasta Dish

I had lost a little weight with out doing anything. Yes, I have remained wheat free, but I have not been following Weight Watchers lately. I guess the stress of everything made me lose focus. I have also not been able to work out which I miss and working out always made me feel good.

Four days ago I weighed myself and I lost six pounds. Then last night I weighed myself and it said I gained five:(

Turns out those wheat free cookies and some of the ice cream from my sister's graduation celebration have caught up to me. So I am back to the core program of weight watchers because I do not need to eat crap and not work out and end up feeling like the Goodyear Blimp!

Tonight, I was making myself dinner and I came up with a Brown Rice Past Dish that I thought I would post on here for Molly and any one else following the core program.

Here is how I made my dinner:

Ingredients:
-1 cup of shrimp
-1/2 cup of brown rice pasta (you can use whole wheat and it will still be core. )
-1 teaspoon of olive oil
-10 green olives
- 1/2 mushrooms,drained
- pepper, salt, garlic, basil (to taste)
- spray oil cooking spray

*Cook the brown rice pasta in boiling water. Strain.

*While the pasta is cooking, coat frying pan with spray.
* Toss shrimp, olives, mushrooms in pan
* Season with the spices
* Stir to evenly distribute the spices

Once the pasta and the ingredients are finished cooking, place pasta in bowl and mix together with the ingredients in the frying pan. Drizzle with olive oil and mix well.

Wheat Free Cookies!!!

After Jacob woke up from his nap, I decided to bake cookies that Jacob could help me make.



Jacob got so excited watching the mixer! He loved watching the cookie dough in the mixer.




Jacob watched me put the dough on the cookie sheets. He helped me count aloud every time I put some dough on the sheet! He is learning so much every day!





We ate a few cookies, although, the wheat free brownies from a few weeks ago tasted so much better.

A Day With Kelly

I spent time with my friend Kelly today. She and I have been friends since 9th grade. She is a lot of fun and I am totally excited for her because she and her husband are expecting their first child! We went to lunch at Johnny Rockets and I stuck to my wheat free diet by ordering a hamburger with no mayo and no bun.

Afterwards, we went to Whole Foods and did some shopping. The day was great and I totally cherish the time that I spend with her since we both lead pretty busy lives.

Wheat Free Is The Way I'll Be

So, I found out I probably have a wheat intolerance. That means that my body does not digest and break down wheat properly. Basically, the wheat I eat converts into sugar because it doesn't get digested, the sugar turns into fat. Making sense because no matter how much I work out or how hard I try, I can not lose weight I eat a lot of whole wheats.

Today was day one on my new wheat free lifestyle. I have not gotten one stomach ache, head ache, cranky moment or tired moment. Even though I will have to say goodbye to a lot of my favorite foods, it will be worth it if I feel better.

I went to Whole Foods and I found Brown Rice Noodles, totally Weight Watchers friendly! I hope that this lifestyle only speeds up my progress on Weight Watchers. Wish me luck!
